(the traditional meal includes beets)
5 medium whole potatoes, peeled
1 to 2 carrots per person, peeled and cut in 3-inch sticks
1 pound turnips peeled and cut into large chunks
2 cups water
2 1/2 pounds corned beef or smoked shoulder ham
Spice packet from corned beef or 3 bay leaves and 1 clove garlic
Layer potatoes, carrots, turnips, water, corned beef or shoulder ham, and spice packet in a slow cooker; cook on high for 5 to 6 hours.
Serve meat on platter; surround with vegetables; reserve cooking liquid for Gravy.
Serves 4 to 6.
1 tablespoon butter
1 1/2 tablespoons flour
2 cups reserved cooking liquid (strain out the spices)
Melt butter in saucepan and add flour to make a roux. Add the reserved cooking liquid and stir until it thickens.
Makes 2 cups.
