Deep-Dish Apple Pie
2 1/2 cups flour
1 1/2 teaspoons sugar
1 1/2 teaspoons salt
1 cup shortening
1 egg, beaten, with added water to total 1/2 cup liquid
1 teaspoon vinegar
Preheat oven to 350 degrees.
In mixing bowl, combine flour, sugar and salt. Cut in shortening. Stir together egg/water mixture with vinegar; add all at once to flour mixture; stir to make dough. Roll out on floured surface. Place pastry in 9-inch round cake pan or 9-inch deep dish pie pan.
Filling
1 1/2 cups sugar
1/2 cup flour
1 teaspoon cinnamon
1 teaspoon nutmeg
1/4 teaspoon salt
8 cups peeled, cored and sliced apples
2 tablespoons butter, melted
For filling, stir together sugar, flour, cinnamon, nutmeg and salt. Place sliced apples in pastry-lined pan. Sprinkle with sugar mixture. Drizzle with melted butter.
Topping
1 cup flour
1/2 cup brown sugar
1/2 cup butter, melted
For topping, stir together flour and brown sugar; add butter and stir until crumbly. Sprinkle over pie.
Bake for 1 to 1 1/2 hours.
Serves 8.
