Gingerbread Waffles
2 eggs, separated
1 3/4 cups buttermilk
1/4 cup molasses
2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1 1/2 teaspoons ground ginger
1 teaspoon cinnamon
1/4 teaspoon cloves
1/2 teaspoon salt
4 tablespoons butter, melted
Preheat waffle iron.
In a large bowl, mix egg yolks, buttermilk and molasses. In a medium bowl, combine flour, baking powder, baking soda, ginger, cinnamon, cloves and salt. Add to buttermilk mixture and mix until smooth. Stir in melted butter.
In a small bowl, beat egg whites until soft peaks form; fold into waffle batter. Bake in preheated waffle iron according to manufacturer's directions.
Makes 4 to 6 waffles.
